Recipe Freebies!

I’ve been really super busy lately (it’s finals week!) and haven’t been able to blog too much. Still, I’ve managed to come up with a few new recipes in the past couple weeks.

Here is a link to a post I made on the PPK forums with recipes for Double Chocolate Chip Cookies, Autumn Clouds Pumpkin Chocolate Chip, PBJ Thumbprints, and Crispy Chewy Oatmeal Raisin Cookies. All have gone through the testing process and the testers have adored these recipes (thank you, testers! <3).

Vegan Fortune Cookies!

They’re homemade too!
I wasn’t thinking these were going to turn out, but they did, and I’m so excited! So many possibilities!
The trick is to make them really thin, fold, then let cool completely while resting on a narrow wine glass to hold their shape. It works perfectly!

Experimentation with gluten free baked goods.
These chocolate chip cookies use rice flour instead of wheat. I found they had a bit of a gritty “aftertexture”, so more experimentation to follow.

Nutter Butters and Peanut Butter Cups!

NUTTER BUTTERS!!

“Real” Nutter Butters are vegan, but homemade is even better! These are crispy and peanut buttery like the real thing, but have more flavor and no hydrogenated oils or preservatives.

These would be delicious atop ice cream or as a pie crust. I used them in the peanut butter cups, but I thought it added a bit too much of a crunch, so I prefer using graham crackers.

Thanksgiving Cookies!

So I did not go all out this Thanksgiving. I made a couple of batches of cookies to bring to my grandma’s and that was that.
I made the Autumn Clouds Pumpkin Cookies (not pictured) and Candy Cane Oreos! The oreos were enough work and I was exhausted.

The day after Thanksgiving was a ton of fun. I went to Fur Free Friday in Chicago with a few friends and it was awesome! Very cold, but lots of fun. I haven’t found many photos from the protest yet, but I’m sure they’ll be up soon.

Mmm…inspiration.

A couple Sundays ago, I found a Dominick’s food catalog with this on the cover:

Chocolate Peppermint Ice Cream Sandwich Cookies

It’s two double chocolate cookies sandwiched around some peppermint candy cane ice cream.
I can already envision a vegan version of this and it’ll be even better!

Cinnamon Roll Cookies are amazing! Garrick is ingenious for coming up with this recipe.
It took me four batches of these to not mess them up (all my fault), but I’m so glad I finally worked these out because they are so good and a huge hit with everyone I shared them with.
