Vegan Fortune Cookies!

They’re homemade too! I wasn’t thinking these were going to turn out, but they did, and I’m so excited! So many possibilities! The trick is to make them really thin, fold, then let cool completely while resting on a narrow wine glass to hold their shape. It works perfectly!

Colorful!

Crispy Swirly Pinwheel Cookies with Pink Sugar Two ways. With vanilla on the outside. Chocolate on the outside. Intense Dark Chocolate Cookies with Sprinkles Experimentation with gluten free baked goods. These chocolate chip cookies use rice flour instead of wheat. I found they had a bit of a gritty “aftertexture”, so more experimentation to follow.

A couple Sundays ago, I found a Dominick’s food catalog with this on the cover: It’s two double chocolate cookies sandwiched around some peppermint candy cane ice cream. I can already envision a vegan version of this and it’ll be even better!
